Arnaud Echalier

Arnaud Echalier originally from Loire Valley began his F&B journey at the Lycée Hôtelier of La Rochelle, later completing sommellerie Diploma in Burgundy. His career includes Michelin-starred experience at L’Auberge Bretonne, Bath Priory, and L’Oustau de Baumanière, where he managed one of France’s most prestigious wine lists with 60,000 bottles.

He spent a decade alongside Spanish 3 Michelin stars chef Santi Santamaria at El Racó de Can Fabes, advancing from assistant sommelier to chief sommelier and GM, earning a Michelin star in Barcelona within five months. Internationally, he has worked across France, the UK, Spain, Macao, and Mauritius, where at One & Only Le Saint Géran the resort wine list achieve the recognition Best Medium Wine List in the Indian Ocean at the World's Best Wine Lists 2023

Today, as a Director of Wine and Beverage for Sands China Ltd, he oversees 50 + restaurants, bringing unmatched expertise, global perspective, and passion for wine education. His career reflects excellence, mentorship, and dedication to advancing hospitality standards.
